Easy Bacon Zucchini Fries – A Vegetable Snack for Meat Lovers

This month, I just wanted to take a break from blogging for awhile. But, I miss writing on my blog. I know that some of the readers wonder where I was away from blogging. Good to be back here 🙂 Everyone love vegetables, some people become vegans for some health reasons. To me, I am not 100% full-time vegan. I consider myself to be fairly vegan and meat lover. My family is mostly meat lovers (especially my husband, his mom was vegetarian until she was pregnant with him, go figure); unfortunately, they are not fully vegans, or even vegetarian. They dislike eating vegetables. I keep encouraging my husband and my sons to eat some vegetables such as carrots, celery, broccoli, and a green salad. In fact, vegetables have a lot of great nutrients. I know that my husband and two sons love bacon, but to me – bacon is very greasy, right? I have no trouble eating bacon. I’ve thought about making both bacon and vegetables. I’ve got such an amazing idea – bacon zucchini fries! It might work and it might not, but I have high hopes!

Easy Bacon Zucchini Fries

Ingredients

  • 1-2 zucchinis
  • 8-10 bacon strips
  • Your favorite dressings or sauces (Optional)

Instructions


 Preheat 425° in the oven. Wash all the dirt off zucchinis and then slice all.

Wrap each wedge in bacon.

Place the wedges on the baking sheet. Do not forget to take vegetable oil spray.

Bake for 15 minutes or until the bacon turns brown.

Let them be cool for awhile and then serve all with your favorite dressings or sauces.

    We (when we can find) take fresh water chestnuts and wrap them in bacon. I think this would work in a similar way, as long as the bacon was crisp. Sounds easy!

    I love zucchini. It’s such a versatile vegetable. And who doesn’t like bacon? Combining the two sounds awesome. Worth trying for sure! Thanks for sharing.

    These look yummy! This is probably the only way I could get my youngest kiddos to eat zucchini. Bacon is always a good idea though. 🙂 Thanks for the super easy recipe!

    This is different, I like different! I love zucchini and I think that I would really like these. They look delicious and I know my husband would love the fact that bacon is also involved. Yum!

      Echo – they are not TOO soft. Just let the paper towels absorb the oil by setting the fries on top of the paper towels on a plate.
